This is the Italian capital, the ‘Eternal city’ where you’ll find 2000 years of antiquities, from the Pantheon to the Colosseum and a delicious menu of local dishes. Taste Artichokes Carciofi alla Romana, simmered in herbs or the simple pasta of cacio e pepe, named for the Pecorino Romano. Discover how to make a creamy carbonara, never with cream. Zip around by Vespa or Cinquecento between the fashionable boutiques stopping to snack on Roman street food, like the supplì, a deep-fried rice croquettes filled with ragu, and of course a gelato anytime. Leave the city for a day and visit Castelli Romani, the verdant hilltops just outside Rome.
